Dried Apple and Pistachio Cake

Other than it's lovely colours, this cake has a sweet, simple flavour.  It is light and fluffy and is delicious served drizzled with pomegranate icing and extra pistachios – though it is also lovely with a simple dusting of icing sugar.  With my love of pomegranates though I couldn't resist...

½ cup pistachio nuts
1 cup dried apple rings, soaked in hot water and then finely chopped, with a few kept whole
1 ¾ cups self raising flour
½ teaspoon baking powder
½ cup butter
2 eggs, lightly whisked
1 tablespoon honey, warmed
¾ cup caster sugar
Pinch of cinnamon
½ teaspoon vanilla
Juice and zest of a lemon
Optional – a dash of Bärenjager liqueur for a honey boost

Preheat oven to 175°C

Cream the butter and sugar until it is very light and fluffy, then add the honey, vanilla and cinnamon.
Add the eggs and combine into the butter and sugar mix well before adding the lemon juice and Bärenjager if using.
Fold through the chopped apple and the pistachio nuts, ensuring an even distribution.
Add the baking powder into the flour and sift into the mixture, with the lemon zest.

Prepare a ring tin by buttering it well and dusting with a little cinnamon.
Use the butter to 'glue' a few apple rings to the outside of the tin, being liberal with the butter to ensure the apple caramelises as the cake cooks.
Pour in the cake batter, smoothing out any bubble in the batter.
Bake at 175°C for 30 minutes, or until a skewer can be removed cleanly.
Allow the cake to cool in the pan briefly before turning out onto a wire rack to cool completely.
To serve, decorate with pomegranate icing and extra pistachios.

Pomegranate Icing

1 pomegranate
1 ½ cups icing sugar


Cut the pomegranate in half and squeeze over a sieve to release the juice and catch the seeds.

Mix the juice of a pomegranate into the icing sugar to form a loose icing. 

Drizzle over the cake and bejewel the top of the cake with the pomegranate seeds and extra pistachios.
