Chocolate Truffles

A Christmas tradition.  There are unlimited versions of Chocolate Truffles you can experiment with, I have included a few of my favourites below.  Golden rule of truffles  is there needs to be alcohol, but it should not overpower the chocolate flavour.

Basic Dark Truffle Mix

500 grams good dark chocolate

200mls double cream

Pinch of salt

Heat the cream allowing it to just boil.  Pour over the chocolate with a pinch of salt and mix to form a thick paste, add flavourings and coating.  Roll into walnut-sized balls and refrigerate.

White Tuffle mix

600 grams white chocolate

1 can condensed milk

1 teaspoon vanilla extract

Pinch of salt

Melt the chocolate slowly over a low heat, then add condensed milk.  Heat without allowing to boil.  Cool mixture before adding flavourings and coating.


Favourite flavourings:

White or dark chocolate truffle with Hazelnut with Avellanas (Hazelnut liqueur)

White or dark chocolate truffle with Almond or Hazelnut with Baileys

Dark chocolate Truffle with Tia Maria

Rum and raisin

White or dark chocolate truffle with Cointreau with orange zest

Whole preserved cherry or chopped glacé cherries with Kirsch

Slivers of mint leaves with Crème de Menthe  - looks wonderful in white truffles

Dark chocolate Roasted peanuts and toffee with Butterscotch Schnapps

White or dark chocolate truffle with coconut

Coating suggestions:

Melted chocolate (opposite of filling) ie dark chocolate truffle with white coating

Rich cocoa powder

Cinnamon mixed evenly with caster sugar

Finely chopped nuts
