Cheeky Quick Jam

If you are pressed for time, but want to make your own jam this is a must.  Tartaric acid works as a preservative and thickener as well as giving a very tart boost to your jam.  This can be made with any bountiful fruit, it works particularly well with apricots and berries. 


2 kg soft fruit (strawberries, raspberries, boysenberries, apricots etc)

2 kg sugar

Juice and zest of 1 lemon

1 ½ tablespoons tartaric acid

Prepare your preserving jars by washing them thoroughly and allowing them to dry upside down on the rack in a 70-90°C oven while you make your preserve.  The jars will be hot, but not scalding when removed from the oven.


Boil fruit with lemon juice and sugar for 10 minutes.

Add tartic acid and boil for another 5-10 minutes or until jam thickens.

Allow to cool slightly before pouring into prepared jars and sealing.


Makes about 6 medium-sized jars of jam, just lovely on hot buttered toast....
