Baby White Bread Rolls

These are very simple, pretty much fool-proof bread rolls, perfect for Mini-burgers, or serving with lunch or dinner.  I made these on Christmas Eve this year to have for Christmas day....  if I am honest...  a few never made it beyond the cooling rack as they smelled delightful and were delicious while they were still warm, with a little bit of butter.

500 grams 00 bakers flour
2 tablespoons yeast
2 teaspoons salt
¾ cup warm milk
¾ cup warm water
½ teaspoon honey

Pre-heat oven to 210°C

Add the yeast to the warm water with the honey and a little of the milk.  Leave the yeast in a warm place and allow to bloom for about 30 minutes.
In a large mixing bowl, sift the flour together with the salt and make a well in the centre.
Once the yeast is activated, add a little at a time to the flour until you are able to form a very soft dough.  Do not allow the mix to become too wet, however it should be fairly soft and pliable and not at all crumbly.
White Bread Rolls

Knead lightly, then cover with oiled plastic wrap and leave to rise for 40 minutes.
Turn the dough out onto a work surface and knead again, dividing the dough into 13 evenly sized rolls.
Place rolls onto a lined baking tray and brush each roll with a little milk and dust with flour.
Cover lightly with plastic wrap and leave in a warm place to rise for about 30 – 40 minutes, or until doubled in size.
Dust with additional flour (or if you prefer seeds) and bake in a hot oven for 15-20 minutes or until golden brown and light.
Allow to cool on a wire rack before eating.
