Beesting Fudge (Honey and Orange)


I may seem as if I have gone entirely fudge-mad, however it really does make a wonderful Christmas gift and it has the good grace to be incredibly easy and quick to make.  Once you have the basics all organised you just need to keep it in the fridge, then serve in pretty little containers.  Bärenjäger is a fabulous sticky honey liqueur which fills this recipe with floral flavour.  If you can track some down it makes all the difference!


450 grams white chocolate


1 can of condensed milk


65 grams of butter


2 tablespoons honey


Zest of 2 oranges


1 tablespoon of Honey Vodka or Bärenjäger


1 tablespoon of Cointreau


Over a low heat, melt the butter and honey with the condensed milk. 


Add the chocolate and mix until smooth and glossy.  Remove from the heat and add the orange zest


Stir through the liqueurs and pour the fudge mixture into a lined baking tray.

Zest a few long strands of orange over the surface of the fudge.

Refrigerate for at least an hour, or until firm.


Cut into mouthful-sized pieces and serve with lots of strong coffee or a Beesting Cocktail – 1 part Cointreau, 1 part Bärenjäger and 1 part Vanilla Vodka with threads of orange zest in the glass.  Yum!
