Soft Nutty Biscuits

Soft Nutty Biscuits

Good, wholesome treat, something between a scone and a biscuit, great for snacks and lunchboxes.  These are not overly sweet and if made with wholemeal flour are almost savoury.

2 cups wholemeal flour or self raising flour
1 teaspoon baking powder
¼ teaspoon of salt
30 grams of butter
½  cup of mixed dried fruit or any combination of sultanas, currants, glacé pineapple or cherries
½ cup slivered almonds
¼  cup chopped walnuts
¼ cup chopped hazelnuts
2 tablespoons brown sugar
1 cup full cream milk
1 egg
¼ teaspoon cinnamon or allspice
Zest and juice of an orange

Pre-heat oven to 220°C

Rub the butter into the flour with the salt, spices, baking powder and zest.  Gradually add the egg, milk and orange juice, then add the dried fruits and nuts.  Mixture should be thick and sticky.  Knead the dough until it is elastic, adding a little extra flour if necessary.
Roll out to about 2cm thick and cut into rounds using a cookie cutter or scone cutter.
Place on a baking sheet lined with baking paper and glaze with milk.
Bake in a hot oven for 15 minutes, or until golden brown.  Fabulous with butter while still hot, or served cold as a snack.
Makes 12 generous biscuits.
