Savoury Cheese and Chive Biscuits

These are a great cracker-style snack and keep for ages.  If they do go a little stale, reheat them in the oven and allow to cool before eating.  Great with cheese and dips!

100 grams fresh parmesan cheese

100 grams butter

200 grams plain or bakers flour

1 eggwhite

1 teaspoon of lemon juice

¼ teaspoon of salt

¼ teaspoon of white pepper

½ teaspoon of dried chives

Pre-heat oven to 220°C.

Rub butter and cheese into the flour, add herbs and spices.  Add lemon juice and eggwhite and work into a stiff dough.

Roll out dough to desired thickness (for fine crunchy type crackers roll very thin, for softer ones roll to about 3mm thick).  Cut to shapes using a cookie cutter – the more adventurous the shape the better – and bake in a hot oven for just a few minutes until golden brown.  It is best to watch these as they cook, as they can very quickly go from lovely to rather overcooked.

 

Variation:  all sorts of herbs and spices can be used to jazz these bickies up.  Wholemeal flour can also be used, however an additional teaspoon of lemon juice may be needed to make a good dough.  If you like it hot, add ½ teaspoon cayenne pepper.  Sweet smoked paprika is also delicious.  For more full-bodied taste, omit the lemon juice and add ½ a tablespoon of tomato paste and a little dried, ground garlic.
