Plain Chocolate Cookies
No-one likes to be called plain, but these are a pretty strait forward chocolate bickie. This mix also makes a great base for Chocolate Cheesecake, or for Baked Choc-Orange Ricotta Cake.
¾ cup plain flour
1 ¼ cup self raising flour
⅓ cup very good cocoa powder
4 tablespoons of butter
3 tablespoons of caster sugar
3 tablespoons of dark brown sugar
1 teaspoon vanilla extract
1 egg
Pinch of salt
½ teaspoon instant coffee dissolved in 2 tablespoons of warm milk
Pre-heat the oven to 175°C
In an electric mixer, cream the butter and sugars until very fluffy, add the vanilla and the egg.
Add the coffee and then the cocoa powder with a pinch of salt and mix well.
Fold through the flour, ensuring the mixture is uniform in colour.
On a lined baking sheet, drop teaspoons of the cookie batter and bake for 15 minutes.
Cool on a wire rack, do not eat until completely cooled and crisp.
Yields about 24 cookies.
