Pear and Parmesan Salad

Deliciously simple, this is a fabulous salad when you want something cool and tasty and light.  The walnuts and parmesan go excellently together, and when added with bitey salad greens and slices of sweet pear, this is a cracker of a salad.

This is a particularly good salad to add to a generous lunch, party table or as part of a larger banquet, it is so easy to put together yet delivers such great flavour it compliments so many other dishes without overpowering them.

2 firm sweet Pears, finely sliced, skin on
100 grams shaved parmesan cheese
150 grams walnuts, toasted
3 tablespoons walnut or olive oil
Juice and zest of an orange
A few sprigs of thyme
A few sprigs of parsley
A couple of chives, cut into long pieces
2 tablespoons apple cider vinegar
Cracked black pepper
Salad greens – mignonette lettuce, rocket, baby beet leaves
Handful of mint leaves

For the dressing:
Whisk together the juice and zest of an orange, apple cider vinegar, walnut oil and thyme until the dressing is emulsified.
Add the pear slices to the dressing and set aside.

On a serving platter lay out the lettuces and add the pear slices.  Shave over the parmesan and add the walnuts, chives, parsley and mint.
Drizzle over the dressing and top with freshly cracked black pepper.

Serve with grilled chicken, fish or slices of pancetta.
