Peanut Butter Cookies

Variation on a theme, these are a good lunchbox standby and keep for a long time in an airtight container.

 

2 tablespoons peanut butter – CRUNCHY!

2 tablespoons of butter

¾ cup self raising flour

½ teaspoon baking powder

2 tablespoons of caster sugar

2 tablespoons dark brown sugar

1 egg

1 teaspoon vanilla essence

2 table spoons roasted (or honey roasted) peanuts, chopped

 

Pre-heat the oven to 175°C

 

In a large mixing bowl, cream the butter and sugars until very fluffy and light.  Beat in the egg, the vanilla and the peanut butter.

Fold through the flour and the chopped peanuts and form the batter up into a fairly sturdy dough.

Form walnut-sized balls of the dough and lay out on a lined baking sheet.  Press flat with the back of a spoon, just enough to flatten the tops of the balls.

Bake for 20 minutes until golden brown and slightly risen.

Allow to cool completely before eating.
