Maple Syrup Cookies

These are a simple crisp biscuit suitable for cutting into imaginative shapes and finishing off with quirky toppings.  A variation of simple sugar cookies these are instead made with maple syrup and ground almonds for additional flavour.
These can also be made gluten free by using gluten free flour or chestnuts flour with the almonds.
Fabulous for kids parties and Christmas cookies, they are easy to make and great fun to ice! 

 
By using whole almonds, ground, rather than the finer almond meal you get a better texture to your cookies.

1 ¼ cups plain flour
1 cup ground almonds
125 grams butter
½ cup maple syrup
1 egg
1 teaspoon vanilla extract
1 tablespoon milk
1 teaspoon baking powder

Pre-heat the oven to 175°C

Maple Syrup Cookies

Cream the butter with the maple syrup then add the almonds, baking powder and flour until it resembles moist breadcrumbs. 

Add the egg and begin forming it into a dense dough.
Add the milk, just enough to allow you to knead the dough without it falling apart.
Knead the dough on a lightly floured surface until smooth and pliable.  Wrap in plastic wrap and refrigerate for at least an hour before trying to roll out or it will fall apart.

Once chilled, lay a sheet of baking paper on your work surface and cover dough with a second piece to reduce contact with the dough.  Roll out thinly, to about ½ cm thick.

Maple Syrup CookiesCut into the desired shapes and place on a lined baking sheet.
Bake in a moderate oven for only about 8 minutes – do not allow to brown.

Allow the biscuits to cool slightly on the tray before transferring to a wire rack to cool completely before decorating as extravagantly as you wish.  Of course these can be eaten without any icing, but that just seems a bit boring.

Icing for these cookies is best left as fairly runny simple lemon icing : icing sugar, lemon juice and vanilla mixed with your choice of colour.  I have used cashous, popping candy, 100s & 1000s, sugar snow flakes, mini choc drops and jelly crystals to send these just over the edge of decency....  

This recipe will make around 36 biscuits.
