Lemon Maple Mascarpone Mousse

This is a simple, yet delicious mousse that can be served to accompany tarts and pies or served as is with strong coffee and a sweet liqueur.  Made with just a few ingredients, it has an intense and surprisingly complex flavour.  Well worth a try this festive season for something a little different.  Also works well with oranges or limes.

Juice and zest of 2 lemons
¾ cup maple syrup
500 grams mascarpone cheese
200mls double cream, whipped
Pinch of salt
2 tablespoons rum or bourbon
2 egg whites, whisked to stiff peaks
1 vanilla pod, seeds scraped out or a teaspoon of vanilla extract

In a large bowl whisk the mascarpone with the lemon juice, vanilla and maple syrup until well combined and aerated.  Add the finely grated zest then fold through the cream and liqueur. 

In a separate bowl whisk the egg whites to stiff peaks with a pinch of salt.  Carefully fold into the mascarpone mixture and decant into a serving dish.
Zest over a few threads of lemon and drizzle over a little maple syrup, then cover and chill overnight.

Serve with pies and tarts or on its own with fruit and liqueur!
