Iced Coffee Cocktail

If you like coffee, you are partial to a bevvy and you have the misfortune to be experiencing a hot summer, this is the drink for you.  Quantities are to share – makes up 1 carafe, however it is easily scaled down.

 Mad Cat Coffee Absinthe

300mls milk

300mls strong espresso coffee

3 shots Kahlua or Tia Maria

3 shots Baileys Irish Cream

3 shots Van Gogh Double Espresso Vodka (or Illy Coffee liqueur)

1 shot Mad Cat Coffee Absinthe

1 shot vanilla vodka

1 shot Fangelico liqueur

3 scoops good vanilla ice-cream

1 tablespoon Demerara sugar



Over ice, combine the milk with the liqueurs and stir well.

Add the coffee and taste, adjust sweetness if required or amend the balance of the flavours to taste.

Serve with scoops of vanilla ice-cream suspended in the carafe, with a sprinkle of Demerara sugar on top.



Variation – Iced Mocha Cocktail

Use chocolate milk instead of  plain milk

Add 2 shots of Mozart chocolate liqueur

Serve with grated chocolate rather than sugar on top.
