Hearth and home. Food that fills you with nostalgia, warmth, calm and care. Perhaps my favourite type of food (don't tell the others) as it is imbued from it's very origins with a preconceived notion of time and worth – of heart. There is history in this food, there is tradition. There is ritual and there is nurturing attention. It is not just slow cooking it also slowness in preparation, leaving yeast to rise, letting flavours steep, giving time to bake food and indulging in the less mechanised and quiet pleasures of kneading, mixing, filling and baking. Fill your home with the lingering warmth of fresh bread, let that lazy mid-winter Sunday be baking day. Invite loved ones into your kitchen, turn off your phone, sink your fingers into the dough and talk.
