French Bean Salad

French Bean Salad

Refreshing and summery, this is a very simple and elegant salad.

600 grams Long French beans, trimmed but whole

2 cloves of garlic, finely sliced across the round

3 spring onions, finely sliced

2 tablespoons pinenuts or flaked almonds if preferred, toasted

2 tablespoons of melted butter or very good olive oil

2 tablespoons white wine vinegar

1 tablespoon parsley, finely chopped

Juice and zest of 2 lemons

Salt and pepper

Steam the beans so that they are only just tender and not over cooked.

Remove from the heat and plunge directly into the melted oil/butter.  Coat well, then add the garlic, spring onions, herbs and lemon.

Add the white wine vinegar and salt and pepper, then taste, adjust seasoning if necessary.

Sprinkle over the toasted pinenuts.

Can be served warm or cold.  For added flavour, crumble over a little fetta or Chèvre cheese.
