I could no more omit this book this book than cease eating altogether.  As detailed in many of the bread recipes here, I have struggled as a baker and have only recently found success with billowy breads. 

The copy I have of this book was published in 1977, the year it won the Glenfiddich Writer of the Year Award. It is a yellowed, tatty, unillustrated edition printed on some of the cheapest paper I have ever seen – and yet it has withstood my pawing for many years. Wonderful, wonderful writing, the book reads like a love letter to baking
