Cornflake Cookies

Such a childhood favourite, there is real nostalgia in this recipe for me.

1 cup of cornflakes
1 egg
½ cup oats
4 tablespoons butter
½ cup currants
½ cup dried apple
1 ½ cups of self raising flour
¾ cup sugar
1 tablespoon of golden syrup
1 teaspoon of cinnamon
Zest of a lemon

Cornflake Cookies

Pre-heat oven to 200°C

In an electric mixer, cream butter and sugar until light and fluffy, then add lemon zest, golden syrup and eggs.  Fold in flour, oats fruit and cinnamon and combine well.  The mixture should be fairly robust.

Take dessertspoonfuls of the mixture and roll in cornflakes, place on a well greased baking sheet and bake for about 15 minutes.

Variations : 

For a chocolate treat replace oats with choc bits. 
For added texture, omit oats for chopped mixed nuts
