Christmas Salad

Ok technically not just for Christmas, but it makes me think of Christmas every time I make it – and for me Christmas is synonymous with cooking....

3 Red Delicious or Pink Lady Apples

100 grams walnuts, toasted

200 grams sugar snap peas

Few sprigs of cress

Few sprigs of mint

½ teaspoon honey

¼ teaspoon salt

¼ teaspoon white pepper

1 teaspoon seeded mustard

Juice and zest of 2 lemons

¼ cup very good olive oil

¼ cup tarragon vinegar

Blanche the peas in boiling water, then plunge into iced water immediately.  The peas should still be crisp.

Finely slice the apple and squeeze over the juice and zest of one lemon.

Toast the walnuts in a dry pan and set aside to cool.

To make the dressing, add the oil, vinegar, honey, mustard, mint salt and pepper to a small bowl and whisk together well with the juice of a lemon. 

On a platter, layer the peas, apple and cress then break over the mint sprigs.  Crumble on the walnuts, then drizzle over the dressing and with threads of lemon zest.

Serve well chilled.
