Christmas Fudge

Traditional Christmas Fudge

I know there are lots of fudge recipes listed here, the thing is most people do enjoy at least one piece of fudge at Christmas... and this recipe is just about as Christmassy as you can get.  The smell is wonderful, it also looks very pretty.

400 grams deep dark chocolate – the very darkest bitter sweet chocolate you can find

1 can of condensed milk

65 grams of butter

3 tablespoons of Brandy

50 grams glacé cherries, halved

50 grams blanched almonds, toasted

1 teaspoon cinnamon

½ teaspoon ground cloves

Pinch of nutmeg

Pinch of salt

Over a low heat, warm the spices and heat until they are aromatic.  Add the butter with the condensed milk. 

Add the chocolate and mix until smooth and glossy.

Stir through the salt, cherries, nuts and the liqueur and pour the fudge mixture into a lined baking tray.

Refrigerate for at least an hour, or until firm.

Cut into mouthful-sized pieces and serve with lots of strong coffee!
