Choc-Nut Fudge

There are few times of the year you can get away with the indulge permitted at Christmas – and for this reason it is truly my favourite time of the year.  This is a lovely fudge, great to give as presents or to have a the end of a long languid meal with lots of strong black coffee, maybe even a liqueur.  Of course you can make it the rest of the year to...

 
100 grams pistachio nuts
50 grams hazelnuts, toasted
400 grams chocolate – deep dark chocolate, or a mix of milk and dark if you prefer
1 can of condensed milk
65 grams of butter
2-3 tablespoons of rum, bourbon or liqueur (optional)
Pinch of salt

Over a low heat, melt the butter with the condensed milk.
Add the chocolate and mix until smooth and glossy.

Stir through the salt, nuts and the liqueur (if using) and pour the fudge mixture into a lined baking tray.

Refrigerate for at least an hour, or until firm.

Cut into mouthful-sized pieces and serve with lots of strong coffee!
