Bubble Bickies

These are another childhood nostalgia biscuit.  There are so many versions of biscuits made with rice bubbles – principally because they are easy for children to make I suspect – but these are my favourites. They are sweet, sticky and a bit indulgent.  Because of their festive colouring, these are also fab for Christmas treats and for those occasions when lots of little hands are seeking out lots of sticky sweets!

 

3 cups of rice bubbles

5 tablespoons butter

1 cup shredded coconut

1 ¼  cups self raising flour

¼ cup glacé cherries, chopped

50 grams white chocolate

⅓ cup sugar

Pinch of cinnamon

¼ cup golden syrup

 

Pre-heat the oven to 180°C

 

In a large mixing bowl combine the flour, rice bubbles, coconut, cherries and cinnamon.

In a small saucepan, gently melt the white chocolate with the sugar, butter and golden syrup.

Pour the melted butter mix into the dry ingredients and combine will into a stiff dough.

On a baking tray lined with baking paper, drop dessertspoonfuls of the mixture, allowing some room for spreading.

Bake for 15 minutes or until just starting to colour.

Allow to cool completely on trays.

Makes about 30 biscuits.
