Blinis with Smoked Salmon, Sour Cream and Caviar

These delightful little Russian pancakes are traditionally served with smoked salmon, caviar and sour cream, which is delicious.  They are also wonderful with prosciutto, sour cream and dill, or just with lemon butter or blueberries and vanilla yoghurt.

Blinis with Smoked Salmon, Sour Cream and Caviar

1 cup buckwheat flour
3 eggs
250mls buttermilk
Pinch of sugar
Pinch of salt
½ teaspoon baking powder


Mix the flour , baking powder, salt and buttermilk together in a large mixing bowl.

Beat the eggs with the sugar and add to the batter.   Beat the mixture well, leave for 10 minutes before cooking. 

Cook the little pancakes on a hot griddle or frying pan.  If you have a crepe pan all the better! 

The pancakes should only be about 5cm in diameter, but should be nice and plump – about 1 -1 ½cms high.

Pile them up on a warm plate and keep them covered with foil until you are ready to eat them.
To serve, dollop on a little sour cream, some smoked salmon and caviar - top with a few threads of lemon and some baby marjoram leaves.
