Berry Bliss Cocktail

Less sweet, very beautiful coloured cocktail which has a deeply satisfying berry blush.  The Cassis (blackcurrant) liqueur is wonderfully syrupy and tart.  Of course you can use plain vodka, I have a fancy for the vanilla varieties, the blueberry variant would also be excellent in this glass of gorgeousness...

2 tablespoons sugar  dissolved in the juice of a lemon

Zest of a lemon

1 bottle Champagne, Sweet Cider or sparkling wine

200mls Terribly good Vodka or Vanilla Vodka

50mls Cassis liqueur

1 bottle sparkling mineral water or lemonade chilled in the freezer until almost frozen

 

In saucepan, add the blueberries, sugar dissolved in the citrus juice and the peel. 

Press the peel down into the syrup and warm just enough to release the oils from the citrus and make the syrup fragrant.  Crush the blueberries into a thick syrupy paste, bring to the boil.

Sieve the mixture, reserving the berry coulis.  Allow to cool. 

  

In a presentation carafe, add the blueberry mix, Cassis Liqueur, and the vodka (you could actually just stop here to be honest...). 

Add the sparkling wine and the mineral water and decorate with threads of lemon zest.  Chill well before serving.

Serve in a martini glass with a thread of lemon zest.
