Banana, Walnut and Honey Muffins

Good old banana muffins.  They are traditional for a reason (not just ot use that suspicious looking 'nana in your fruit bowl) they are delicious!

2 eggs
⅓ cup vegetable oil – canola or sunflower
1 cup Greek yoghurt
½ cup honey
2 teaspoons vanilla extract
Juice of a half a lemon
2 bananas - mashed
2 cups self raising flour
1 teaspoon baking powder
½ teaspoon  nutmeg
¾  cup toasted walnuts

Pre-heat the oven to 200°C

Whisk together the eggs, vanilla, honey, lemon juice, yoghurt and oil until well combined.
Fold through the flour with dry spices and the baking powder using a spatula.
Add the mashed bananas and walnuts spoon into muffin trays – jumbo, regular or mini.
Sprinkle a few walnuts on top of the muffins before they are cooked with a drizzle of extra honey.
Bake in a hot oven for 25 minutes.

Great for lunchboxes and freeze really well.
Bit of a secret pleasure – these are fab warmed through and served with custard.  Oohh...
