Bacon Baked Potatoes

There are so many ways to serve potato, I think this one is a little different and worth a go from time to time.  The flavour of the bacon seeps all the way into the potatoes as they cook, giving them a salty, smokey flavour that is just delicious.  They may be a little bit naughty, but they are scrummy!

Potatoes, medium to small ones work best.  The roasting and baking varieties are the ones you should look for: Nadines, Maris Pipers, Kestrel or Desiree are great varieties
Bacon – the really good British style, rindless streaky bacon if you can get it, with a very good smokey flavour and plenty of creamy fat

1 garlic clove, crushed
Grated nutmeg
Olive oil
A little pepper
Juice of a lemon

Pre-heat oven to 170°C

You will need one rasher of bacon per spud, so work out your quantities based on how many folks you are feeding. 

Peel the potatoes and place them in a bowl of water with the juice of a lemon.  This stops them oxidising and it helps to reduce the starchiness of the spuds so they will bake up nicely.

Once the spuds are all peeled, dry them well with paper towel.   On a baking tray sprinkle in the pepper, sage leaves, crushed garlic and nutmeg.  Roll the potatoes in the herbs, then wrap each potato in a rasher of bacon.
Thread the potatoes onto a metal skewer, about three per skewer should be enough, otherwise the potatoes may not cook through.

Trickle over a little olive oil and some extra herbs and place on a baking tray.   

Bake in a moderate oven until the potatoes are just golden and the bacon is sizzling and crispy.  Do not let the oven get too hot or your bacon will burn, a longer more moderate bake (about 25-35 minutes, but this will vary on the size of your potatoes) is the best way to go.

For an extra dose of juicy wonderousness - add a little trickle of maple syrup and return the spuds to the oven for about 2 mintutes.... fab. 
Serve sprinkled with a few fresh herbs alongside barbecued meats, chicken or just a hearty salad and frosty beverage.
