Avocado Dip

Avocado Dip is great to add to any dip platter, barbeque or salad.  Of course it is also fabulous with corn chips or warm tortillas! 

 

2 large ripe avocado, peeled and de-stoned

3 spring onions, very finely chopped

150mls light sour cream, yoghurt or crème fraiche

Juice and Zest of a lemon

½ teaspoon of salt

pepper

handful of chopped parsley

optional - ¼ teaspoon chopped fresh chillies or a sprinkle of chilli powder

In a mixing bowl, mash avocado with a fork not into a fine paste, but with a little bit of texture.  Add all the other ingredients and combine well.  Taste for seasoning and smoothness - yoghurt can be added in place of the sour cream if a lighter flavour is preferred.  

Combine well and allow 30 minutes in the fridge before consuming.
