Apple and Pecan Muffins

Apples are synonymous with sweet cakes, muffins and pies.  This is one of my favourite, very easy and quick sweet muffin recipes.
Actually... this recipe is really a two for one – By omitting the sweet spices and instead adding 3 tablespoons of crumbled strong or blue cheese, these are a great savoury muffin.Apple and Pecan Muffins

2 eggs
⅓ cup vegetable oil – canola or sunflower
1 cup Greek yoghurt
½ cup maple syrup
2 teaspoons vanilla extract
2 cups self raising flour
1 teaspoon baking powder
Juice of a half a lemon
1 teaspoon cinnamon
½ teaspoon  allspice
½ teaspoon nutmeg
1 cup cooked apple
½ cup toasted pecans

Pre-heat the oven to 200°C

Whisk together the eggs, vanilla, maple syrup, lemon juice, yoghurt and oil until well combined.
Fold through the flour with dry spices and the baking powder using a spatula.
Fold through the apple and pecans and spoon into muffin trays – jumbo, regular or mini. 

Pop a pecan or two onto the top of the muffin with a little drizzle of maple syrup before it is baked, then it is ready to go once it comes out the oven!

 

Bake in a hot oven for 25 minutes.

Allow to cool before eating if you can...

These also freeze really well and are perfect for mid-morning snacks!
