Almond Cardamom Cakes

This is another recipe inspired by culinary history – Medieval Circletes – or little cakey biscuits offered at celebrations.

1 cup of butter

½ cup brown sugar

¼ cup caster sugar

1 egg

2 ½ cups plain flour

Juice and zest of a lemon

½ teaspoon ground cardamom

2 tablespoons ground almonds

½ teaspoon cinnamon

100 grams slivered almonds

1 cup of raisins

½ teaspoon baking powder

Pre-heat the oven to 180°C

In a large mixing bowl, cream the butter and sugars together well, then add the egg.

In a separate bowl, combine the raisins with the spices and the lemon juice and zest.  Leave to steep for a few minutes then add to the butter and egg mixture.

Fold through the flour, baking powder and almonds.

Chill the dough for about an hour.  Once chilled, form into teaspoon sized balls and baked on a lined baking sheet for about 10 minutes, or until just golden.

Allow to cool completely before eating.
